BestMethod- Thaw in Refrigerator Overnight. Grilling – Using a medium hot to hot grill, cook steaks about 3 min per side then rotate. Repeat this process as needed until desired level of doneness is achieved.

2nd Best Method
– Thaw in Refrigerator Overnight. Baking – Bake at 375° F in a shallow baking pan for 10 minutes, turn and bake another 5 minutes for med rare, 10 minutes for med, or 15 min for well.

Quickest Method
– Keep the roast in it’s packaging and submerge in a bowl of cold water for 30 minutes or until completley thawed. Grilling – Using a medium hot to hot grill, cook steaks about 3 min per side then rotate. Repeat this process as needed until desired level of doneness is achieved.

Cooking Tips:

  • For a chef’s touch: brush filets lightly with olive oil, season and cook as desired.
  • To obtain a more seasoned rub flavor, use ¾ teaspoon of seasoning per side of filet.

Cut filet across grain into slices and fan across plate. Top with Béarnaise Sauce for mock chateaubriand.

Heat olive oil over medium-high heat in a medium-sized oven-safe skillet. Season filets with sea salt and cracked black pepper; carefully add to hot oil, browning each side for 2 minutes.
Transfer skillet to oven and roast in pan for 12-15 minutes (medium-rare to medium). Remove from oven; let stand 4-5 minutes. Be sure to pull toothpicks out of each filet before serving! Top filets with a tablespoon each of crumbled Gorgonzola and serve atop Pan-Roasted Cremini Mushrooms & Fennel Bulb.
